Snow Crab Parfaits
Pairs Well With
½ cup finely chopped celery
½ cup finely chopped Japanese cucumber
¼ cup minced fresh chives
½ pound (about 1 cup) snow crab meat ― you may substitute king crab
Wasabi Dressing (recipe below)
½ cup salmon caviar
Garnish: paper-thin slices of cucumber & fresh chive spears
4 tall, stemmed glasses, about 8 oz capacity
In a bowl, mix prepared celery, cucumber and chives. Spoon 2 tablespoons crab into each glass. Divide half of the celery mixture, half of the wasabi dressing and half of the caviar among the glasses. Repeat, ending with caviar on top. Garnish with slices of cucumber and fresh chive spears. Serves four as a first course.
¼ cup mayonnaise (low fat)
¼ sour cream (low fat)
½ teaspoon grated Meyer lemon peel along with 1 teaspoon of the juice
About 2 teaspoons prepared wasabi
In a bowl combine mayonnaise, sour cream, lemon and lemon juice. Add prepared wasabi to taste (you can use fresh grated if available).
