Bacon-Wrapped Stuffed Chicken Breast

Pairs Well With

Chicken Marinade

Ingredients

2 large chicken breasts
2 tablespoons whole grain Dijon mustard
Juice of 1 lemon
3 garlic cloves, pressed
¼ cup olive oil (Merry used fresh oil from the 100-year-old trees at the winery)
1 4-inch sprig fresh rosemary, leaves only
Salt and pepper to taste

Preparation

Put all marinade ingredients into a plastic zipper bag and shake to mix. Add chicken breasts, shake to cover with marinade and refrigerate for 30 minutes.

Chicken Wrap/Stuffing

Ingredients

2 slices thick-cut bacon (Merry used an applewood-smoked type)
2 teaspoons herbed goat cheese (As Ken does not care for goat cheese, Merry used Alouette cheese with Italian herbs ― 8 individually wrapped cubes in a package that weighs 4.7 ounces total)
 

Preparation

Remove chicken breasts from marinade. Make a slit into thickest portion of breast deep enough for the cheese stuffing. Close slit and fold over to seal. Wrap stuffed breast with a bacon slice to hold everything together and place in an oven-proof glass dish. Bake for about 30 minutes in a 400-degree oven until firm to the touch.
 

Lemon-Garlic Greens

Ingredients

Juice of 1 lemon
2 tablespoons olive oil
2 cloves garlic, pressed
Salt and pepper
Generous handful of fresh arugula
 

Preparation

Quickly whisk lemon juice and oil together in medium size bowl. Add garlic and salt and pepper to taste. Add greens and toss. Place half of this mixture on each plate and top with chicken breast. Merry served this with oven-baked baby red potatoes and fresh broccoli from her garden.
(Note: Merry substituted fresh garden butter leaf lettuce for this pairing with Chardonnay, but tangy arugula pairs well with Sauvignon Blanc.)

Kim and Shaun Gameroz of Irvine, California, submitted this creation to our ongoing Win a Magnum contest. Merry tried it out for a family gathering and it got a thumbs-up! Kim and Shaun paired this with our Sauvignon Blanc, but Merry changed it up slightly to serve with our Olivet Lane Chardonnay.
