Shiitake Frittata

8 oz fresh shiitake mushrooms
3 tablespoons olive oil
1 onion, diced
1 clove garlic, mashed
4 eggs
1/4 cup bread crumbs
1/2 teaspoon salt
1/8 teaspoon each oregano, white pepper, Tabasco
1/2 pound Monterey jack cheese, grated
2 tablespoon fresh cilantro, finely chopped


Finely dice shiitake in food processor or by hand.  Saute onions, garlic and shiitake in olive oil, over medium heat, until barely limp. Beat eggs, and add shiitake mixture along with all remaining ingredients and mix.  Turn into 8" square pan.  Bake at 325 degrees for about 30 minutes, or until firm and lightly browned.  Cool.  Cut into 2" squares.  Garnish plate with fresh nasturtiums, pear and cherry tomatoes.
